Almond Flour Chocolate Chip Cookies

A soft and chewy cookie recipe made with almond flour and studded with chocolate chips.

Ingredients
  

  • 50 g almond flour
  • 30 g unsalted butter softened
  • 30 g brown sugar
  • 1 egg yolk
  • 1/4 tsp baking soda
  • 1/4 tsp vanilla extract
  • 30 g dark chocolate chips

Instructions
 

  • Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  • Cream the butter and sugar together until smooth.
  • Mix in the egg yolk and vanilla extract.
  • Add almond flour and baking soda, stirring until a soft dough forms.
  • Fold in the chocolate chips.
  • Scoop small portions of dough onto the prepared baking sheet.
  • Flatten slightly and bake for 8-10 minutes until the edges are golden.
  • Let cool for 5 minutes before transferring to a wire rack.
