Ingredients
  

  • 2 cups fresh purslane leaves washed and chopped
  • 1/2 cup Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Fresh dill or parsley for garnish optional

Instructions
 

  • In a large mixing bowl, combine the chopped purslane leaves, Greek yogurt, olive oil, lemon juice, minced garlic, salt, and black pepper.
  • Toss everything together until the purslane is well coated with the yogurt dressing.
  • Garnish with fresh dill or parsley if desired.
