Ingredients
  

  • 2 medium eggplants cubed
  • 1 zucchini sliced
  • 1 red bell pepper chopped
  • 1 onion chopped
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • 2 cups canned crushed tomatoes
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp black pepper
  • Salt to taste
  • Fresh parsley for garnish optional

Instructions
 

  • In a large pan, heat the olive oil over medium heat. Add the cubed eggplant, zucchini, bell pepper, and onion, and sauté until softened and golden brown (about 10-12 minutes).
  • Add the minced garlic and sauté for an additional 2 minutes.
  • Add the crushed tomatoes, paprika, cumin, salt, and black pepper. Stir well and simmer for 10-15 minutes until the sauce thickens.
  • Taste and adjust the seasoning if needed.
  • Garnish with fresh parsley if desired.
  • Serve hot as a side dish or light main course.
