
Creamy Tomato and Basil Soup
A light and creamy soup made with fresh tomatoes, basil, and olive oil.
Ingredients
- 5 large ripe tomatoes peeled and chopped
- 1 medium onion chopped
- 2 garlic cloves finely chopped
- 3 cups vegetable stock
- 1/2 cup coconut milk or cream
- 2 tablespoons olive oil
- 1/4 cup fresh basil leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes.
- Add the chopped tomatoes and cook for 10 minutes, stirring occasionally.
- Pour in the vegetable stock, bring to a boil, then reduce heat and simmer for 15 minutes.
- Remove from heat and blend the soup until smooth using an immersion blender.
- Stir in coconut milk or cream, and season with salt and black pepper.
- Serve hot in bowls, garnished with fresh basil leaves.
