Creamy Tomato and Basil Soup

A light and creamy soup made with fresh tomatoes, basil, and olive oil.

Ingredients
  

  • 5 large ripe tomatoes peeled and chopped
  • 1 medium onion chopped
  • 2 garlic cloves finely chopped
  • 3 cups vegetable stock
  • 1/2 cup coconut milk or cream
  • 2 tablespoons olive oil
  • 1/4 cup fresh basil leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes.
  • Add the chopped tomatoes and cook for 10 minutes, stirring occasionally.
  • Pour in the vegetable stock, bring to a boil, then reduce heat and simmer for 15 minutes.
  • Remove from heat and blend the soup until smooth using an immersion blender.
  • Stir in coconut milk or cream, and season with salt and black pepper.
  • Serve hot in bowls, garnished with fresh basil leaves.
