
Spicy Thai Peanut Chicken Wrap
A flavorful and exotic wrap made with spicy Thai peanut sauce, grilled chicken, and fresh vegetables.
Ingredients
- 2 chicken breasts for grilling
- 4 whole wheat tortillas
- 1 cup shredded carrots
- 1 cup thinly sliced red cabbage
- 1/2 cup thinly sliced red bell pepper
- 1/4 cup chopped fresh cilantro
- 1 tablespoon olive oil
- Salt and black pepper
For the Thai peanut sauce
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon garlic powder
- 1/2 teaspoon red chili flakes
- 2-3 tablespoons water to adjust consistency
Instructions
- Marinate the chicken breasts with olive oil, salt, and black pepper, then grill or pan-fry for 8-10 minutes. Slice thinly once cooked.
- For the Thai peanut sauce, whisk together all sauce ingredients in a bowl until smooth.
- Spread the Thai peanut sauce evenly over the tortillas.
- Layer shredded carrots, red cabbage, red bell pepper, sliced chicken, and chopped cilantro onto each tortilla.
- Wrap tightly and cut in half. Serve immediately.
