Spicy Thai Peanut Chicken Wrap

Ingredients
  

  • 2 chicken breasts for grilling
  • 4 whole wheat tortillas
  • 1 cup shredded carrots
  • 1 cup thinly sliced red cabbage
  • 1/2 cup thinly sliced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • Salt and black pepper

For the Thai peanut sauce

  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red chili flakes
  • 2-3 tablespoons water to adjust consistency

Instructions
 

  • Marinate the chicken breasts with olive oil, salt, and black pepper, then grill or pan-fry for 8-10 minutes. Slice thinly once cooked.
  • For the Thai peanut sauce, whisk together all sauce ingredients in a bowl until smooth.
  • Spread the Thai peanut sauce evenly over the tortillas.
  • Layer shredded carrots, red cabbage, red bell pepper, sliced chicken, and chopped cilantro onto each tortilla.
  • Wrap tightly and cut in half. Serve immediately.
