Smoked Salmon & Cream Cheese Bagel Sandwich

Ingredients
  

  • 4 whole grain bagels
  • 200 g smoked salmon
  • 1 cup cream cheese
  • 1/2 cup thinly sliced red onion
  • 1/2 cup capers
  • 1 cup fresh arugula or lettuce
  • 1 medium cucumber thinly sliced
  • 1 tablespoon lemon juice
  • Salt and black pepper

Instructions
 

  • Slice the bagels in half and lightly toast the inner sides.
  • Generously spread cream cheese on the bottom half of each bagel.
  • Evenly layer the smoked salmon slices over the cream cheese.
  • Add thinly sliced onion, cucumber, and capers on top of the salmon.
  • Add a layer of arugula or lettuce, and drizzle with a bit of lemon juice.
  • Place the top half of the bagel on top and serve the sandwiches.
