Ingredients
  

  • 4 whole wheat tortillas
  • 1 cup hummus
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup chopped red bell pepper
  • 1/2 cup sliced black olives
  • 1/2 cup crumbled feta cheese
  • 1 cup fresh arugula or spinach leaves
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and black pepper

Instructions
 

  • Spread hummus evenly over each tortilla.
  • Divide the cucumber, tomatoes, bell pepper, olives, and feta cheese evenly over the tortillas.
  • Top with arugula or spinach leaves.
  • Mix olive oil and lemon juice, then drizzle over the vegetables.
  • Add salt and black pepper to taste.
  • Roll the tortillas tightly and cut in half. Serve immediately.
