Ingredients
- 4 whole wheat tortillas
- 1 cup hummus
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- 1/2 cup chopped red bell pepper
- 1/2 cup sliced black olives
- 1/2 cup crumbled feta cheese
- 1 cup fresh arugula or spinach leaves
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and black pepper
Instructions
- Spread hummus evenly over each tortilla.
- Divide the cucumber, tomatoes, bell pepper, olives, and feta cheese evenly over the tortillas.
- Top with arugula or spinach leaves.
- Mix olive oil and lemon juice, then drizzle over the vegetables.
- Add salt and black pepper to taste.
- Roll the tortillas tightly and cut in half. Serve immediately.
