Ingredients
  

  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 cup black olives sliced
  • 1/2 cup cooked chickpeas
  • 1/4 cup red onion thinly sliced
  • 1/2 cup crumbled feta cheese optional, omit for vegan
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper

Instructions
 

  • Place the cooked quinoa in a large salad bowl.
  • Add cherry tomatoes, diced cucumber, sliced olives, chickpeas, and red onion.
  • In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and black pepper to create the dressing.
  • Pour the dressing over the salad and toss until well combined.
  • Optionally, sprinkle with feta cheese and serve immediately.
