
Mediterranean Quinoa Power Salad
A hearty and nutritious salad enriched with fresh vegetables, quinoa, and Mediterranean flavors.
Ingredients
- 1 cup cooked quinoa
- 1 cup cherry tomatoes halved
- 1 cucumber diced
- 1/2 cup black olives sliced
- 1/2 cup cooked chickpeas
- 1/4 cup red onion thinly sliced
- 1/2 cup crumbled feta cheese optional, omit for vegan
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and black pepper
Instructions
- Place the cooked quinoa in a large salad bowl.
- Add cherry tomatoes, diced cucumber, sliced olives, chickpeas, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and black pepper to create the dressing.
- Pour the dressing over the salad and toss until well combined.
- Optionally, sprinkle with feta cheese and serve immediately.
