
Kale and Sweet Potato Bowl
A nourishing bowl made with nutrient-rich kale, roasted sweet potatoes, and protein-packed ingredients.
Ingredients
- 2 cups chopped kale
- 2 medium sweet potatoes diced into cubes
- 1 cup cooked chickpeas
- 1 tablespoon olive oil for sweet potatoes
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and black pepper
For the Sauce
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 clove garlic grated
- 1 tablespoon water for consistency
- Pinch of salt
Instructions
- Preheat the oven to 200°C (400°F). Toss the sweet potatoes with olive oil, cumin, paprika, salt, and black pepper, then spread them on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized.
- Place the kale in a bowl, sprinkle with a little salt, and massage with your hands to soften it.
- Optionally, lightly warm the chickpeas in a pan or roast them in the oven for 5-10 minutes.
- For the sauce, whisk together tahini, lemon juice, garlic, water, and salt until smooth.
- To assemble, add kale as the base of the bowl. Top with roasted sweet potatoes and chickpeas.
- Drizzle with tahini sauce and serve immediately.
