Kale and Sweet Potato Bowl

Ingredients
  

  • 2 cups chopped kale
  • 2 medium sweet potatoes diced into cubes
  • 1 cup cooked chickpeas
  • 1 tablespoon olive oil for sweet potatoes
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper

For the Sauce

  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 clove garlic grated
  • 1 tablespoon water for consistency
  • Pinch of salt

Instructions
 

  • Preheat the oven to 200°C (400°F). Toss the sweet potatoes with olive oil, cumin, paprika, salt, and black pepper, then spread them on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized.
  • Place the kale in a bowl, sprinkle with a little salt, and massage with your hands to soften it.
  • Optionally, lightly warm the chickpeas in a pan or roast them in the oven for 5-10 minutes.
  • For the sauce, whisk together tahini, lemon juice, garlic, water, and salt until smooth.
  • To assemble, add kale as the base of the bowl. Top with roasted sweet potatoes and chickpeas.
  • Drizzle with tahini sauce and serve immediately.
