Roasted Red Pepper and Hummus Veggie Sandwich

Ingredients
  

  • 8 slices whole wheat bread
  • 1 cup hummus
  • 2 roasted red peppers sliced into strips
  • 1 cucumber thinly sliced
  • 1/2 cup shredded carrots
  • 1/4 cup finely chopped red cabbage
  • 1/2 avocado sliced
  • 1 handful fresh arugula or lettuce leaves
  • Salt and black pepper

Instructions
 

  • Spread a layer of hummus on each slice of bread.
  • On four slices, layer roasted red pepper strips, cucumber slices, shredded carrots, red cabbage, and avocado slices.
  • Add fresh arugula or lettuce leaves on top.
  • Sprinkle with salt and black pepper, then cover with the remaining slices of bread.
  • Cut the sandwiches in half and serve immediately.
