
Roasted Red Pepper and Hummus Veggie Sandwich
A flavorful sandwich made with roasted red peppers, creamy hummus, and fresh vegetables.
Ingredients
- 8 slices whole wheat bread
- 1 cup hummus
- 2 roasted red peppers sliced into strips
- 1 cucumber thinly sliced
- 1/2 cup shredded carrots
- 1/4 cup finely chopped red cabbage
- 1/2 avocado sliced
- 1 handful fresh arugula or lettuce leaves
- Salt and black pepper
Instructions
- Spread a layer of hummus on each slice of bread.
- On four slices, layer roasted red pepper strips, cucumber slices, shredded carrots, red cabbage, and avocado slices.
- Add fresh arugula or lettuce leaves on top.
- Sprinkle with salt and black pepper, then cover with the remaining slices of bread.
- Cut the sandwiches in half and serve immediately.
