Ingredients
  

  • 2 chicken breasts thinly sliced for grilling
  • 1 ripe avocado diced
  • 4 cups mixed greens arugula, spinach, lettuce
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup finely chopped red onion
  • 1/4 cup sliced cucumber
  • Dressing:
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and black pepper

Dressing

Instructions
 

  • Grill the chicken breasts for 7-8 minutes on each side, then slice into strips.
  • Add the mixed greens to a large salad bowl.
  • Top with diced avocado, cherry tomatoes, red onion, and cucumber.
  • Arrange the sliced grilled chicken over the salad.
  • For the dressing, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper.
  • Drizzle the dressing over the salad and toss gently before serving.
