
Grilled Chicken and Avocado Salad
A healthy and protein-packed salad made with grilled chicken breast, fresh vegetables, and creamy avocado.
Ingredients
- 2 chicken breasts thinly sliced for grilling
- 1 ripe avocado diced
- 4 cups mixed greens arugula, spinach, lettuce
- 1/2 cup cherry tomatoes halved
- 1/4 cup finely chopped red onion
- 1/4 cup sliced cucumber
- Dressing:
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and black pepper

Instructions
- Grill the chicken breasts for 7-8 minutes on each side, then slice into strips.

- Arrange the sliced grilled chicken over the salad.
- For the dressing, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper.
- Drizzle the dressing over the salad and toss gently before serving.
