Ingredients
  

  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 cup unsalted butter softened
  • 1/4 cup brown sugar
  • 2 tablespoons molasses
  • 1 egg yolk

Instructions
 

  • Preheat the oven to 175°C (350°F). Line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, baking soda, salt, cinnamon, and ginger. Set aside.
  • In a larger bowl, beat softened butter, brown sugar, and molasses until creamy. Add the egg yolk and mix until smooth.
  • Gradually add the dry ingredients to the wet ingredients, stirring until a soft dough forms.
  • Roll the dough into small balls and flatten slightly onto the prepared baking sheet.
  • Bake for 10-12 minutes, or until the edges are golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
