Ingredients
For the Cake
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup unsalted butter melted
- 1/4 cup milk
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
For the Lemon Glaze
- 1/2 cup powdered sugar
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 175°C (350°F). Grease and flour a small loaf pan or line it with parchment paper.
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk together eggs, melted butter, milk, lemon juice, and lemon zest.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
- For the glaze, mix powdered sugar and lemon juice until smooth. Drizzle over the cooled cake.
- Slice and serve.
