For the Cake

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsalted butter melted
  • 1/4 cup milk
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest

For the Lemon Glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice

Instructions
 

  • Preheat the oven to 175°C (350°F). Grease and flour a small loaf pan or line it with parchment paper.
  • In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  • In another bowl, whisk together eggs, melted butter, milk, lemon juice, and lemon zest.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
  • For the glaze, mix powdered sugar and lemon juice until smooth. Drizzle over the cooled cake.
  • Slice and serve.
