
Coconut & Pineapple Tropical Pancake

Ingredients
- 1.5 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup coconut milk
- 1 large egg
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 cup finely chopped pineapple
- Shredded coconut and pineapple slices for topping
Instructions
- In a bowl, mix the flour, sugar, baking powder, and salt.
- Add the coconut milk, egg, melted coconut oil, and vanilla extract, and whisk until smooth.
- Fold in the chopped pineapple.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake. Cook until bubbles form on the edges, then flip and cook until golden brown.
- Place the pancakes on a serving plate, and top with shredded coconut and pineapple slices.
