Ingredients
  

  • 1.5 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup coconut milk
  • 1 large egg
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped pineapple
  • Shredded coconut and pineapple slices for topping

Instructions
 

  • In a bowl, mix the flour, sugar, baking powder, and salt.
  • Add the coconut milk, egg, melted coconut oil, and vanilla extract, and whisk until smooth.
  • Fold in the chopped pineapple.
  • Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake. Cook until bubbles form on the edges, then flip and cook until golden brown.
  • Place the pancakes on a serving plate, and top with shredded coconut and pineapple slices.
