Ingredients
  

  • 1.5 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1.25 cups milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 2 large apples thinly sliced
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter for the apples

Instructions
 

  • In a bowl, mix the flour, sugar, baking powder, cinnamon, and salt.
  • In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until smooth.
  • Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake. Cook until bubbles form on the edges, then flip and cook until golden brown.
  • In another pan, melt 1 tablespoon of butter. Add the thinly sliced apples and brown sugar, cooking and stirring until the apples are soft and caramelized.
  • Place the pancakes on a serving plate, top with the caramelized apple slices, and serve warm.
