
Caramelized Apple Pancake

Ingredients
- 1.5 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1.25 cups milk
- 1 large egg
- 2 tablespoons melted butter
- 2 large apples thinly sliced
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 1 tablespoon butter for the apples
Instructions
- In a bowl, mix the flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until smooth.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake. Cook until bubbles form on the edges, then flip and cook until golden brown.
- In another pan, melt 1 tablespoon of butter. Add the thinly sliced apples and brown sugar, cooking and stirring until the apples are soft and caramelized.
- Place the pancakes on a serving plate, top with the caramelized apple slices, and serve warm.
