Tamago Yaki (Japanese Sweet Omelette)

A slightly sweet, folded Japanese omelette, perfect for sushi or a unique breakfast treat.

Ingredients
  

  • 4 large eggs
  • 1 tablespoon sugar
  • 1 tablespoon mirin (sweet rice wine)
  • 1 teaspoon soy sauce
  • 1 tablespoon water
  • A pinch of salt
  • Vegetable oil, for cooking

Instructions
 

  • In a bowl, beat the eggs well and add sugar, mirin, soy sauce, water, and salt, mixing until well combined.
  • Heat a non-stick pan (preferably a rectangular or square tamago pan) over medium heat and lightly oil it.
  • Pour a thin layer of the egg mixture into the pan. Once it begins to set, gently roll it to one side of the pan.
  • Re-oil the pan, pour another thin layer of the mixture, and roll the omelette back onto the new layer. Repeat until the egg mixture is used up.
  • Remove the omelette from the pan, allow it to cool slightly, and slice it into even pieces.
  • Serve warm or cold.
