
Tamago Yaki (Japanese Sweet Omelette)
A slightly sweet, folded Japanese omelette, perfect for sushi or a unique breakfast treat.
Ingredients
- 4 large eggs
- 1 tablespoon sugar
- 1 tablespoon mirin (sweet rice wine)
- 1 teaspoon soy sauce
- 1 tablespoon water
- A pinch of salt
- Vegetable oil, for cooking
Instructions
- In a bowl, beat the eggs well and add sugar, mirin, soy sauce, water, and salt, mixing until well combined.
- Heat a non-stick pan (preferably a rectangular or square tamago pan) over medium heat and lightly oil it.
- Pour a thin layer of the egg mixture into the pan. Once it begins to set, gently roll it to one side of the pan.
- Re-oil the pan, pour another thin layer of the mixture, and roll the omelette back onto the new layer. Repeat until the egg mixture is used up.
- Remove the omelette from the pan, allow it to cool slightly, and slice it into even pieces.
- Serve warm or cold.
