Ingredients
  

For the Blini:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter plus extra for cooking

Toppings:

  • 4 large boiled eggs sliced
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup red caviar salmon roe or other
  • Fresh dill for garnish (optional)

Instructions
 

  • Prepare the Blini Batter: In a bowl, mix flour, baking powder, and salt. In a separate bowl, whisk together milk, egg, and melted butter. Combine the wet ingredients with the dry ingredients and mix until smooth.
  • Cook the Blini: Heat a skillet over medium heat and lightly butter it. Pour small amounts of batter onto the skillet to form small pancakes. Cook each side for 1-2 minutes until golden. Repeat until all batter is used.
  • Assemble: Place a slice of boiled egg on each blini. Add a dollop of sour cream or yogurt and top with a small spoonful of red caviar.
  • Garnish: Garnish with fresh dill and serve immediately.
