
Blini with Red Caviar and Egg
Soft and thin Russian pancakes (blini) topped with red caviar, sour cream, and boiled eggs, offering a rich and elegant taste.
Ingredients
For the Blini:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter plus extra for cooking
Toppings:
- 4 large boiled eggs sliced
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup red caviar salmon roe or other
- Fresh dill for garnish (optional)
Instructions
- Prepare the Blini Batter: In a bowl, mix flour, baking powder, and salt. In a separate bowl, whisk together milk, egg, and melted butter. Combine the wet ingredients with the dry ingredients and mix until smooth.
- Cook the Blini: Heat a skillet over medium heat and lightly butter it. Pour small amounts of batter onto the skillet to form small pancakes. Cook each side for 1-2 minutes until golden. Repeat until all batter is used.
- Assemble: Place a slice of boiled egg on each blini. Add a dollop of sour cream or yogurt and top with a small spoonful of red caviar.
- Garnish: Garnish with fresh dill and serve immediately.
