  • 4 large eggs
  • 4 large tomatoes (tops cut off and slightly hollowed out)
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper (to taste)
  • Fresh basil or parsley (for garnish, optional)

Instructions
 

  • Preheat the oven to 180°C (350°F) and lightly grease a baking tray.
  • Crack an egg into each tomato. Drizzle with olive oil and sprinkle thyme, salt, and pepper on top.
  • Bake for about 15 minutes, or until the eggs reach your desired doneness.
  • Optionally garnish with fresh basil or parsley and serve warm.
