
Baked Tomatoes with Thyme Eggs Recipe
A light baked egg dish flavored with tomatoes and thyme.
Ingredients
- 4 large eggs
- 4 large tomatoes (tops cut off and slightly hollowed out)
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper (to taste)
- Fresh basil or parsley (for garnish, optional)
Instructions
- Preheat the oven to 180°C (350°F) and lightly grease a baking tray.
- Crack an egg into each tomato. Drizzle with olive oil and sprinkle thyme, salt, and pepper on top.
- Bake for about 15 minutes, or until the eggs reach your desired doneness.
- Optionally garnish with fresh basil or parsley and serve warm.
