Ingredients
  

  • 6 large eggs
  • 1/2 cup diced sausage
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh parsley or basil, for garnish

Instructions
 

  • Heat olive oil in a pan, add diced sausage, and sauté until slightly browned.
  • Add red and green bell peppers and sauté for a few more minutes.
  • In a bowl, whisk the eggs, adding salt and pepper.
  • Combine the sautéed sausage and peppers with the eggs and pour into a greased small baking dish.
  • Sprinkle shredded cheese on top and bake in a preheated oven at 180°C (350°F) for 20 minutes or until the eggs are puffed and set.
  • Garnish with fresh parsley or basil and serve hot.
