
Baked Eggs with Colorful Peppers and Sausage
A hearty baked egg recipe with colorful bell peppers and sausage for a tasty, satisfying meal.
Ingredients
- 6 large eggs
- 1/2 cup diced sausage
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/4 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh parsley or basil, for garnish
Instructions
- Heat olive oil in a pan, add diced sausage, and sauté until slightly browned.
- Add red and green bell peppers and sauté for a few more minutes.
- In a bowl, whisk the eggs, adding salt and pepper.
- Combine the sautéed sausage and peppers with the eggs and pour into a greased small baking dish.
- Sprinkle shredded cheese on top and bake in a preheated oven at 180°C (350°F) for 20 minutes or until the eggs are puffed and set.
- Garnish with fresh parsley or basil and serve hot.
