Ingredients
- 6 large eggs
- 1 cup chopped arugula
- 1/2 cup cottage cheese
- 1/4 cup chopped green onions
- Salt and pepper, to taste
- Greased muffin tin (8 cups)
Instructions
- Whisk the eggs in a bowl, adding salt and pepper.
- Add the chopped arugula, cottage cheese, and green onions to the egg mixture and stir well.
- Pour the mixture evenly into the greased muffin tin cups.
- Bake in a preheated oven at 180°C (350°F) for 15 minutes or until the muffins are puffed and set.
