
Spinach and Ricotta Lasagna
A delicious and comforting lasagna made with layers of spinach, ricotta cheese, and pasta, perfect for a hearty meal.
Ingredients
- 9 lasagna sheets preferably whole wheat
- 2 cups fresh spinach chopped
- 1 1/2 cups ricotta cheese
- 1 cup grated mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 onion chopped
- 2 garlic cloves minced
- 2 tbsp olive oil
- 1/4 tsp nutmeg
- Salt and black pepper to taste
- Fresh basil or parsley for garnish optional
Instructions
- Preheat the oven to 180°C (350°F).
- Cook the lasagna sheets according to package instructions, drain, and set aside.
- In a pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened, about 5 minutes.
- Add the spinach to the pan and cook until wilted, then remove from heat.
- In a bowl, combine the ricotta cheese, nutmeg, salt, and black pepper.
- In a baking dish, spread a thin layer of marinara sauce on the bottom. Place a layer of lasagna sheets on top, followed by a layer of the ricotta mixture, spinach, and a sprinkle of mozzarella cheese.
- Repeat the layers, finishing with a layer of marinara sauce and a sprinkle of Parmesan cheese.
- Bake for 30-40 minutes, until the top is golden and bubbly.
- Garnish with fresh basil or parsley and serve hot.
