
Baked Zucchini and Potato Gratin
A comforting and creamy gratin made with layers of zucchini and potatoes, topped with a crispy, golden layer of cheese.
Ingredients
- 2 medium zucchinis thinly sliced
- 2 large potatoes thinly sliced
- 1 cup heavy cream or plant-based cream for a dairy-free version
- 1/2 cup grated cheese or dairy-free cheese
- 2 garlic cloves minced
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- Fresh thyme or rosemary for garnish optional
Instructions
- Preheat the oven to 200°C (400°F).
- Grease a baking dish with olive oil.
- Layer the sliced potatoes and zucchinis alternately in the baking dish.
- In a small bowl, mix the heavy cream, minced garlic, salt, and pepper. Pour the mixture evenly over the vegetables.
- Sprinkle the grated cheese over the top and drizzle with a little extra olive oil.
- Bake for 25-30 minutes, or until the top is golden and the vegetables are tender.
- Garnish with fresh thyme or rosemary before serving.
