Baked Zucchini and Potato Gratin

Ingredients
  

  • 2 medium zucchinis thinly sliced
  • 2 large potatoes thinly sliced
  • 1 cup heavy cream or plant-based cream for a dairy-free version
  • 1/2 cup grated cheese or dairy-free cheese
  • 2 garlic cloves minced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Fresh thyme or rosemary for garnish optional

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Grease a baking dish with olive oil.
  • Layer the sliced potatoes and zucchinis alternately in the baking dish.
  • In a small bowl, mix the heavy cream, minced garlic, salt, and pepper. Pour the mixture evenly over the vegetables.
  • Sprinkle the grated cheese over the top and drizzle with a little extra olive oil.
  • Bake for 25-30 minutes, or until the top is golden and the vegetables are tender.
  • Garnish with fresh thyme or rosemary before serving.
