Vegan Cheese and Spinach Börek

A flaky and savory vegan börek filled with a delicious combination of spinach and dairy-free cheese. Perfect for a light meal or appetizer.

Ingredients
  

  • 1 package of vegan puff pastry store-bought or homemade
  • 2 cups fresh spinach chopped
  • 1/2 cup vegan cheese shredded or crumbled
  • 1/4 cup onion finely chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp sesame seeds optional, for garnish

Instructions
 

  • heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until softened.
  • Add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
  • In a mixing bowl, combine the sautéed spinach and onion with the vegan cheese, lemon juice, salt, and pepper.
  • Roll out the puff pastry and cut it into squares or rectangles.
  • Place a spoonful of the spinach and vegan cheese mixture in the center of each pastry piece. Fold the pastry over and seal the edges.
  • Place the böreks on a baking tray lined with parchment paper and brush the tops with the remaining olive oil.
  • Sprinkle sesame seeds on top, if using.
  • Bake for 20-25 minutes, or until golden and crispy.
  • Serve hot as a delicious vegan snack or appetizer.
