
Vegan Cheese and Spinach Börek
A flaky and savory vegan börek filled with a delicious combination of spinach and dairy-free cheese. Perfect for a light meal or appetizer.
Ingredients
- 1 package of vegan puff pastry store-bought or homemade
- 2 cups fresh spinach chopped
- 1/2 cup vegan cheese shredded or crumbled
- 1/4 cup onion finely chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp sesame seeds optional, for garnish
Instructions
- heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until softened.
- Add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the sautéed spinach and onion with the vegan cheese, lemon juice, salt, and pepper.
- Roll out the puff pastry and cut it into squares or rectangles.
- Place a spoonful of the spinach and vegan cheese mixture in the center of each pastry piece. Fold the pastry over and seal the edges.
- Place the böreks on a baking tray lined with parchment paper and brush the tops with the remaining olive oil.
- Sprinkle sesame seeds on top, if using.
- Bake for 20-25 minutes, or until golden and crispy.
- Serve hot as a delicious vegan snack or appetizer.
