Spicy Vegan Lentil Soup

Ingredients
  

  • 1 cup dried lentils rinsed
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 carrot diced
  • 1 celery stalk diced
  • 1 can 400 g diced tomatoes
  • 4 cups vegetable broth
  • 1 tbsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp chili flakes adjust to taste
  • Salt and black pepper to taste
  • Fresh cilantro for garnish optional
  • 1 tbsp chili oil for drizzling

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until softened, about 5-7 minutes.
  • Add the cumin, paprika, and chili flakes, and cook for another 1-2 minutes to release the spices’ aroma.
  • Stir in the diced tomatoes, vegetable broth, and lentils. Bring the soup to a boil, then reduce the heat and simmer for 25-30 minutes, or until the lentils are tender.
  • Season with salt and black pepper to taste.
  • Serve the soup in bowls, drizzled with chili oil and garnished with fresh cilantro if desired.
