
Spicy Vegan Lentil Soup
A hearty and flavorful vegan lentil soup with a spicy kick, perfect for a comforting and nutritious meal.
Ingredients
- 1 cup dried lentils rinsed
- 1 tbsp olive oil
- 1 onion chopped
- 2 garlic cloves minced
- 1 carrot diced
- 1 celery stalk diced
- 1 can 400 g diced tomatoes
- 4 cups vegetable broth
- 1 tbsp ground cumin
- 1 tsp paprika
- 1/2 tsp chili flakes adjust to taste
- Salt and black pepper to taste
- Fresh cilantro for garnish optional
- 1 tbsp chili oil for drizzling
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until softened, about 5-7 minutes.
- Add the cumin, paprika, and chili flakes, and cook for another 1-2 minutes to release the spices’ aroma.
- Stir in the diced tomatoes, vegetable broth, and lentils. Bring the soup to a boil, then reduce the heat and simmer for 25-30 minutes, or until the lentils are tender.
- Season with salt and black pepper to taste.
- Serve the soup in bowls, drizzled with chili oil and garnished with fresh cilantro if desired.
