
Sugar-Free Almond Flour Muffins

Ingredients
- 2 cups almond flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla extract
- 2 tbsp erythritol or another sweetener of choice optional
- 1/4 cup coconut oil or butter melted
Instructions
- Preheat the oven to 180°C (350°F). Line a muffin tin with paper liners or grease with butter.
- In a medium bowl, combine almond flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the eggs, almond milk, vanilla extract, sweetener (if using), and melted coconut oil or butter.
- Add the wet ingredients to the dry ingredients and stir until well combined.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick comes out clean and the muffins are golden brown.
- Allow to cool for 5 minutes before removing from the tin.
