Ingredients
  

  • 2 cups almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 2 tbsp erythritol or another sweetener of choice optional
  • 1/4 cup coconut oil or butter melted

Instructions
 

  • Preheat the oven to 180°C (350°F). Line a muffin tin with paper liners or grease with butter.
  • In a medium bowl, combine almond flour, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the eggs, almond milk, vanilla extract, sweetener (if using), and melted coconut oil or butter.
  • Add the wet ingredients to the dry ingredients and stir until well combined.
  • Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  • Bake for 20-25 minutes, or until a toothpick comes out clean and the muffins are golden brown.
  • Allow to cool for 5 minutes before removing from the tin.
