Ingredients
  

  • 2 chicken breasts grilled and sliced
  • 1 avocado sliced
  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste
  • Fresh herbs such as parsley or cilantro for garnish

Instructions
 

  • Preheat the grill or grill pan to medium-high heat.
  • Season the chicken breasts with salt and black pepper, and grill for 6-7 minutes per side, or until fully cooked. Once done, slice the chicken into strips.
  • In a large bowl, combine the mixed greens, cherry tomatoes, and red onion.
  • Add the sliced avocado and grilled chicken on top.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the dressing.
  • Drizzle the dressing over the salad and toss gently.
  • Garnish with fresh herbs and serve immediately.
