
Grilled Chicken and Avocado Salad
A refreshing and healthy salad with tender grilled chicken, creamy avocado, mixed greens, and a light vinaigrette. Perfect for a nutritious lunch or dinner.
Ingredients
- 2 chicken breasts grilled and sliced
- 1 avocado sliced
- 4 cups mixed salad greens
- 1/2 cup cherry tomatoes halved
- 1/4 red onion thinly sliced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- Salt and black pepper to taste
- Fresh herbs such as parsley or cilantro for garnish
Instructions
- Preheat the grill or grill pan to medium-high heat.
- Season the chicken breasts with salt and black pepper, and grill for 6-7 minutes per side, or until fully cooked. Once done, slice the chicken into strips.
- In a large bowl, combine the mixed greens, cherry tomatoes, and red onion.
- Add the sliced avocado and grilled chicken on top.
- In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad and toss gently.
- Garnish with fresh herbs and serve immediately.
