Avocado and Smoked Salmon Stuffed Eggs

Ingredients
  

  • 4 large eggs hard-boiled and halved
  • 1 ripe avocado mashed
  • 1/4 cup plain Greek yogurt or dairy-free yogurt
  • 1 tsp lemon juice
  • Salt and black pepper to taste
  • 4 oz smoked salmon thinly sliced
  • Fresh dill or chives for garnish optional

Instructions
 

  • Peel the hard-boiled eggs and carefully cut them in half lengthwise. Remove the yolks and set them aside.
  • In a bowl, mash the avocado and combine it with the egg yolks, Greek yogurt, lemon juice, salt, and black pepper.
  • Mix until smooth and creamy.
  • Spoon or pipe the avocado mixture into the egg white halves.
  • Top each egg with a slice of smoked salmon.
  • Garnish with fresh dill or chives if desired.
  • Serve immediately or refrigerate until ready to serve.
