
Avocado and Smoked Salmon Stuffed Eggs
A delicious and creamy appetizer with halved eggs filled with avocado and topped with smoked salmon. Perfect for a light snack or appetizer.
Ingredients
- 4 large eggs hard-boiled and halved
- 1 ripe avocado mashed
- 1/4 cup plain Greek yogurt or dairy-free yogurt
- 1 tsp lemon juice
- Salt and black pepper to taste
- 4 oz smoked salmon thinly sliced
- Fresh dill or chives for garnish optional
Instructions
- Peel the hard-boiled eggs and carefully cut them in half lengthwise. Remove the yolks and set them aside.
- In a bowl, mash the avocado and combine it with the egg yolks, Greek yogurt, lemon juice, salt, and black pepper.
- Mix until smooth and creamy.
- Spoon or pipe the avocado mixture into the egg white halves.
- Top each egg with a slice of smoked salmon.
- Garnish with fresh dill or chives if desired.
- Serve immediately or refrigerate until ready to serve.
