Ingredients
- 4 large potatoes peeled and boiled
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg beaten
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp ground cumin
- Salt and black pepper to taste
- 1/4 cup chopped fresh parsley optional
- Oil for frying
- Dipping sauce optional, such as ketchup or aioli
Instructions
- Mash the boiled potatoes in a large bowl until smooth.
- Stir in the breadcrumbs, Parmesan cheese, beaten egg, paprika, garlic powder, cumin, salt, and black pepper.
- Form the mixture into small, oval-shaped croquettes.
- Heat oil in a frying pan over medium heat. Fry the croquettes in batches, cooking for 2-3 minutes per side until golden and crispy.
- Remove from the pan and drain on a paper towel.
- Garnish with fresh parsley if desired and serve with your favorite dipping sauce.
