Ingredients
  

  • 4 large potatoes peeled and boiled
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg beaten
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp ground cumin
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley optional
  • Oil for frying
  • Dipping sauce optional, such as ketchup or aioli

Instructions
 

  • Mash the boiled potatoes in a large bowl until smooth.
  • Stir in the breadcrumbs, Parmesan cheese, beaten egg, paprika, garlic powder, cumin, salt, and black pepper.
  • Form the mixture into small, oval-shaped croquettes.
  • Heat oil in a frying pan over medium heat. Fry the croquettes in batches, cooking for 2-3 minutes per side until golden and crispy.
  • Remove from the pan and drain on a paper towel.
  • Garnish with fresh parsley if desired and serve with your favorite dipping sauce.
