Ingredients
  

  • 2 medium sweet potatoes cut into wedges
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • 1 cup hummus store-bought or homemade
  • Fresh herbs for garnish optional, such as parsley or cilantro
  • Lemon wedges for serving optional

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Toss the sweet potato wedges in olive oil, paprika, cumin, salt, and black pepper. Spread them out in a single layer on a baking sheet.
  • Roast for 25-30 minutes, flipping halfway through, until the sweet potatoes are golden and crispy on the outside and tender on the inside.
  • Transfer the roasted sweet potatoes to a serving platter and serve with a generous side of hummus.
  • Garnish with fresh herbs and serve with lemon wedges if desired.
