
Roasted Sweet Potato and Hummus Plate
A delicious and nutritious dish with golden roasted sweet potatoes served with creamy hummus, perfect as a snack or light meal.
Ingredients
- 2 medium sweet potatoes cut into wedges
- 2 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp ground cumin
- Salt and black pepper to taste
- 1 cup hummus store-bought or homemade
- Fresh herbs for garnish optional, such as parsley or cilantro
- Lemon wedges for serving optional
Instructions
- Preheat the oven to 200°C (400°F).
- Toss the sweet potato wedges in olive oil, paprika, cumin, salt, and black pepper. Spread them out in a single layer on a baking sheet.
- Roast for 25-30 minutes, flipping halfway through, until the sweet potatoes are golden and crispy on the outside and tender on the inside.
- Transfer the roasted sweet potatoes to a serving platter and serve with a generous side of hummus.
- Garnish with fresh herbs and serve with lemon wedges if desired.
