Ingredients
  

  • 4 fresh artichokes trimmed and halved
  • 1/4 cup extra virgin olive oil
  • 2 garlic cloves minced
  • 1/2 lemon juiced
  • 1 cup vegetable broth
  • 1 tsp dried thyme or fresh herbs like rosemary or parsley
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional

Instructions
 

  • Trim the artichokes by removing the outer tough leaves, cutting off the top, and slicing them in half. Remove the fuzzy choke in the center.
  • Heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Add the artichokes to the pan, cut side down, and cook for about 5 minutes, until lightly golden.
  • Pour in the vegetable broth and lemon juice. Add the thyme, salt, and black pepper.
  • Cover the pan, reduce the heat to low, and simmer for 20-25 minutes, until the artichokes are tender and the liquid has reduced slightly.
  • Garnish with fresh parsley before serving, if desired.
