
Olive Oil Braised Fresh Artichokes
A simple and flavorful dish with fresh artichokes braised in olive oil, garlic, and herbs for a tender and aromatic taste.
Ingredients
- 4 fresh artichokes trimmed and halved
- 1/4 cup extra virgin olive oil
- 2 garlic cloves minced
- 1/2 lemon juiced
- 1 cup vegetable broth
- 1 tsp dried thyme or fresh herbs like rosemary or parsley
- Salt and black pepper to taste
- Fresh parsley for garnish optional
Instructions
- Trim the artichokes by removing the outer tough leaves, cutting off the top, and slicing them in half. Remove the fuzzy choke in the center.
- Heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the artichokes to the pan, cut side down, and cook for about 5 minutes, until lightly golden.
- Pour in the vegetable broth and lemon juice. Add the thyme, salt, and black pepper.
- Cover the pan, reduce the heat to low, and simmer for 20-25 minutes, until the artichokes are tender and the liquid has reduced slightly.
- Garnish with fresh parsley before serving, if desired.
