
Çılbır (Poached Eggs with Yogurt and Butter)
Çılbır is a traditional Turkish dish featuring poached eggs served on creamy yogurt, topped with melted butter infused with paprika, creating a delicious and comforting meal.
Ingredients
- 4 eggs
- 2 cups plain yogurt room temperature
- 1 garlic clove minced, optional
- 2 tbsp butter
- 1 tsp paprika or red chili flakes
- 1 tbsp vinegar
- Salt to taste
- Fresh dill for garnish
Instructions
- Mix yogurt with minced garlic and a pinch of salt, then spread it onto serving plates.
- Fill a pot with water, add vinegar, and bring it to a gentle simmer. Crack each egg into a small bowl and gently slide it into the water. Poach for 3-4 minutes or until the whites are set but the yolks remain runny. Remove with a slotted spoon and place on the yogurt.
- In a small pan, melt butter and stir in paprika or chili flakes. Drizzle the flavored butter over the eggs and yogurt.
- Garnish with fresh dill and serve immediately.
