Tamales (Corn Dough with Filled Packets)

Ingredients
  

For the Masa (Dough):

  • 2 cups masa harina corn flour
  • 1/2 cup vegetable shortening or lard
  • 1 cup chicken or vegetable broth
  • 1 tsp baking powder
  • 1/2 tsp salt

For the Filling:

  • 2 cups shredded chicken or pork
  • 1 cup red or green chili sauce
  • Optional: cheese or roasted vegetables

For Wrapping:

  • 12 dried corn husks soaked in warm water

Instructions
 

  • Beat shortening or lard until fluffy. Gradually add masa harina, baking powder, and salt, alternating with broth, until a soft dough forms.
  • Spread 2-3 tablespoons of masa dough onto the center of each corn husk, leaving space at the edges. Add a spoonful of filling in the center.
  • Fold the sides of the husk over the filling, then fold the bottom end upwards.
  • Arrange tamales upright in a steamer basket. Steam over medium heat for 1.5 hours, checking occasionally to ensure the water doesn’t dry out.
  • Serve hot with salsa or your favorite side dishes.
