
Tamales (Corn Dough with Filled Packets)
A traditional Mexican dish, Tamales are made with masa (corn dough) filled with savory or sweet ingredients, wrapped in corn husks, and steamed to perfection.
Ingredients
For the Masa (Dough):
- 2 cups masa harina corn flour
- 1/2 cup vegetable shortening or lard
- 1 cup chicken or vegetable broth
- 1 tsp baking powder
- 1/2 tsp salt
For the Filling:
- 2 cups shredded chicken or pork
- 1 cup red or green chili sauce
- Optional: cheese or roasted vegetables
For Wrapping:
- 12 dried corn husks soaked in warm water
Instructions
- Beat shortening or lard until fluffy. Gradually add masa harina, baking powder, and salt, alternating with broth, until a soft dough forms.
- Spread 2-3 tablespoons of masa dough onto the center of each corn husk, leaving space at the edges. Add a spoonful of filling in the center.
- Fold the sides of the husk over the filling, then fold the bottom end upwards.
- Arrange tamales upright in a steamer basket. Steam over medium heat for 1.5 hours, checking occasionally to ensure the water doesn’t dry out.
- Serve hot with salsa or your favorite side dishes.
