
Pozole (Spiced Soup with Corn Kernels)
A traditional Mexican dish, Pozole is a hearty soup made with hominy, chicken or pork, and a flavorful red chili broth, garnished with fresh toppings.
Ingredients
- 1 cup hominy canned or cooked
- 2 cups shredded chicken or pork
- 6 cups chicken or pork broth
- 2 dried guajillo chilies seeded and soaked
- 2 dried ancho chilies seeded and soaked
- 1 onion chopped
- 2 garlic cloves
- 1 tsp oregano
- 1 tsp cumin
- Salt to taste
For Garnish:
- Sliced radishes
- Shredded lettuce
- Lime wedges
- Fresh cilantro
Instructions
- Blend soaked chilies with a small amount of soaking water, onion, and garlic to form a smooth paste.
- Heat a large pot and add the chili paste. Stir in broth, hominy, oregano, and cumin, simmering for 20 minutes.
- Add shredded chicken or pork to the pot and simmer for another 20 minutes. Adjust seasoning with salt.
- Serve hot with radishes, lettuce, lime wedges, and cilantro as garnishes.
