Ingredients
  

  • 1 cup hominy canned or cooked
  • 2 cups shredded chicken or pork
  • 6 cups chicken or pork broth
  • 2 dried guajillo chilies seeded and soaked
  • 2 dried ancho chilies seeded and soaked
  • 1 onion chopped
  • 2 garlic cloves
  • 1 tsp oregano
  • 1 tsp cumin
  • Salt to taste

For Garnish:

  • Sliced radishes
  • Shredded lettuce
  • Lime wedges
  • Fresh cilantro

Instructions
 

  • Blend soaked chilies with a small amount of soaking water, onion, and garlic to form a smooth paste.
  • Heat a large pot and add the chili paste. Stir in broth, hominy, oregano, and cumin, simmering for 20 minutes.
  • Add shredded chicken or pork to the pot and simmer for another 20 minutes. Adjust seasoning with salt.
  • Serve hot with radishes, lettuce, lime wedges, and cilantro as garnishes.
