
Horchata (Refreshing Rice Milk Drink)
Horchata is a traditional Mexican beverage made from rice and flavored with cinnamon and vanilla, served chilled for a refreshing treat.
Ingredients
- 1 cup long-grain white rice
- 4 cups water
- 1 cinnamon stick
- 1/2 cup sugar adjust to taste
- 1 tsp vanilla extract
- 2 cups milk or almond milk for a dairy-free version
- Ground cinnamon for garnish
Instructions
- Rinse the rice under cold water and combine it with 4 cups of water and the cinnamon stick in a blender. Blend briefly, then let it soak for at least 4 hours or overnight.
- Blend the soaked rice and cinnamon mixture until smooth. Strain through a fine mesh sieve or cheesecloth into a large pitcher, discarding the solids.
- Stir in sugar, vanilla extract, and milk until well combined. Refrigerate until chilled.
- Serve over ice and garnish with a sprinkle of ground cinnamon.
