
Udon Noodles (with Shrimp or Vegetables)

Ingredients
For the Broth:
- 6 cups dashi stock
- 1/4 cup soy sauce
- 2 tbsp mirin
- 1 tsp sugar
For the Toppings:
- 400 g udon noodles fresh or frozen
- 200 g shrimp peeled and deveined or a mix of broccoli, carrots, and bell peppers (sliced)
- 1 tsp sesame oil
- 2 scallions sliced, for garnish
Instructions
- Prepare the broth by heating dashi stock in a pot over medium heat. Add soy sauce, mirin, and sugar, stirring until dissolved. Bring to a gentle simmer.
- Cook the udon noodles according to the package instructions. Drain and set aside.
- Heat sesame oil in a skillet over medium heat. Sauté shrimp or vegetables until cooked through.
- Divide the cooked noodles into bowls. Pour the hot broth over the noodles. Top with shrimp or sautéed vegetables.
- Garnish with sliced scallions and serve hot.
