Ingredients
  

For the Broth:

  • 6 cups dashi stock
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 1 tsp sugar

For the Toppings:

  • 400 g udon noodles fresh or frozen
  • 200 g shrimp peeled and deveined or a mix of broccoli, carrots, and bell peppers (sliced)
  • 1 tsp sesame oil
  • 2 scallions sliced, for garnish

Instructions
 

  • Prepare the broth by heating dashi stock in a pot over medium heat. Add soy sauce, mirin, and sugar, stirring until dissolved. Bring to a gentle simmer.
  • Cook the udon noodles according to the package instructions. Drain and set aside.
  • Heat sesame oil in a skillet over medium heat. Sauté shrimp or vegetables until cooked through.
  • Divide the cooked noodles into bowls. Pour the hot broth over the noodles. Top with shrimp or sautéed vegetables.
  • Garnish with sliced scallions and serve hot.
