Palak Paneer (Spinach and Paneer Curry)

Ingredients
  

  • 200 g paneer cubed
  • 4 cups fresh spinach leaves washed and chopped
  • 1 tbsp vegetable oil
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1 tsp ginger grated
  • 1 green chili optional, chopped
  • 1/2 cup tomato puree
  • 1/2 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1/4 cup heavy cream or yogurt
  • Salt to taste
  • Fresh cilantro for garnish

Instructions
 

Blanch the spinach:

  • Cook spinach leaves in boiling water for 2-3 minutes. Drain and blend into a smooth puree.

Prepare the curry base:

  • Heat oil in a pan and sauté onions until golden. Add garlic, ginger, and green chili, cooking until fragrant. Stir in tomato puree, turmeric, cumin, and garam masala. Cook for 5 minutes.

Combine spinach and paneer:

  • Add the spinach puree to the pan and mix well. Stir in cream or yogurt and cook for 5 minutes. Gently add paneer cubes and simmer for 2-3 minutes.
  • Garnish with fresh cilantro and serve hot with naan or rice.
