Masala Dosa (Spiced Potato-Filled Crepe)

Ingredients
  

For the Dosa Batter:

  • 1 cup rice
  • 1/2 cup urad dal split black gram
  • 1/4 tsp fenugreek seeds
  • Water for soaking and grinding

For the Potato Filling:

  • 3 medium potatoes boiled and mashed
  • 1 onion sliced
  • 1 green chili chopped
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric
  • 1 tsp cumin seeds
  • 1 tbsp vegetable oil
  • Salt to taste

Instructions
 

  • Soak rice, urad dal, and fenugreek seeds in water for 6 hours. Grind them into a smooth batter and let it ferment overnight.
  • Heat oil in a pan. Add mustard seeds, cumin seeds, and green chili, and sauté until aromatic. Add onions and cook until soft. Mix in turmeric, mashed potatoes, and salt, cooking for 2 minutes.
  • Heat a flat skillet or dosa pan. Spread a ladle of batter into a thin circle. Cook until the edges lift, then add potato filling to the center and fold the dosa over.
  • Serve hot with coconut chutney and sambar.
