
Korma (Creamy and Spiced Curry with Meat or Vegetables)
A rich and aromatic dish, Korma combines tender meat or vegetables in a creamy, spiced sauce, often garnished with nuts and fresh herbs.
Ingredients
For the Curry:
- 500 g chicken lamb, or mixed vegetables (cut into pieces)
- 3 tbsp vegetable oil or ghee
- 2 onions finely chopped
- 3 garlic cloves minced
- 1 tsp grated ginger
- 1/2 cup yogurt
- 1 cup coconut milk or heavy cream
- 1/2 cup tomato puree
- 1 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
For Garnish:
- Toasted almonds or cashews
- Fresh cilantro
Instructions
- Heat oil in a large pan and sauté onions until golden brown. Add garlic and ginger, cooking until fragrant.
- Add turmeric, cumin, coriander, and garam masala, stirring to toast the spices.
- Mix in the meat or vegetables and cook until browned. Stir in yogurt, tomato puree, and coconut milk, simmering for 20 minutes until the meat is tender or the vegetables are soft.
- Adjust seasoning with salt and garnish with toasted almonds or cashews and fresh cilantro. Serve hot with naan or basmati rice.
