Ingredients
  

For the Chole (Chickpea Curry):

  • 2 cups cooked chickpeas or 1 can, drained
  • 2 tbsp vegetable oil
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1 tsp ginger grated
  • 1 cup tomato puree
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 cup water
  • Salt to taste
  • Fresh cilantro for garnish

For the Bhature (Fried Bread):

  • 2 cups all-purpose flour
  • 1/2 cup yogurt
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp baking powder
  • Water as needed for dough
  • Vegetable oil for frying

Instructions
 

Prepare the Chole:

  • Heat oil in a pan. Sauté onions, garlic, and ginger until golden. Add tomato puree and spices, cooking until the oil separates. Stir in chickpeas and water, simmering for 15-20 minutes. Garnish with cilantro.

Prepare the Bhature:

  • In a bowl, mix flour, yogurt, salt, sugar, and baking powder. Add water gradually to form a soft dough. Rest for 30 minutes.
  • Divide the dough into small balls and roll them into circles. Heat oil in a deep pan and fry each piece until puffed and golden.
  • Serve the hot bhature with the prepared chole.
