
Chole Bhature (Spicy Chickpea Curry with Fried Bread)

Ingredients
For the Chole (Chickpea Curry):
- 2 cups cooked chickpeas or 1 can, drained
- 2 tbsp vegetable oil
- 1 onion finely chopped
- 2 garlic cloves minced
- 1 tsp ginger grated
- 1 cup tomato puree
- 1 tsp turmeric
- 1 tsp chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1/2 cup water
- Salt to taste
- Fresh cilantro for garnish
For the Bhature (Fried Bread):
- 2 cups all-purpose flour
- 1/2 cup yogurt
- 1/2 tsp salt
- 1/2 tsp sugar
- 1/2 tsp baking powder
- Water as needed for dough
- Vegetable oil for frying
Instructions
Prepare the Chole:
- Heat oil in a pan. Sauté onions, garlic, and ginger until golden. Add tomato puree and spices, cooking until the oil separates. Stir in chickpeas and water, simmering for 15-20 minutes. Garnish with cilantro.
Prepare the Bhature:
- In a bowl, mix flour, yogurt, salt, sugar, and baking powder. Add water gradually to form a soft dough. Rest for 30 minutes.
- Divide the dough into small balls and roll them into circles. Heat oil in a deep pan and fry each piece until puffed and golden.
- Serve the hot bhature with the prepared chole.
