Butter Chicken

A classic Indian dish, Butter Chicken features tender chicken pieces simmered in a creamy, spiced tomato-based curry sauce.

Ingredients
  

For the Chicken Marinade:

  • 500 g chicken breast or thigh cubed
  • 1/2 cup yogurt
  • 1 tbsp lemon juice
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp chili powder
  • 1 tsp ginger grated
  • 1 tsp garlic minced

For the Curry:

  • 3 tbsp unsalted butter
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1 tsp ginger grated
  • 1 cup tomato puree
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 1/2 cup heavy cream
  • Salt to taste

For Garnish:

  • Fresh cilantro leaves
  • Swirl of cream

Instructions
 

  • Mix all marinade ingredients in a bowl and coat the chicken. Let it marinate for at least 30 minutes or overnight in the refrigerator.
  • Heat butter in a large skillet or pan over medium heat. Add marinated chicken and cook until lightly browned. Remove and set aside.
  • In the same pan, add more butter if needed. Sauté onions, garlic, and ginger until soft and fragrant.
  • Stir in tomato puree, chili powder, cumin, and coriander powder. Cook for 5 minutes until the oil separates.
  • Add the cooked chicken to the sauce. Stir in heavy cream and simmer for 10-15 minutes until the chicken is tender and the sauce is rich.
  • Garnish with cilantro leaves and a swirl of cream. Serve hot with naan or steamed rice.
