
Biryani (Spiced Rice with Chicken or Vegetables)
A fragrant and flavorful dish, Biryani features basmati rice cooked with aromatic spices, tender chicken or vegetables, and garnished with caramelized onions and cilantro.
Ingredients
For the Rice:
- 2 cups basmati rice washed and soaked for 30 minutes
- 4 cups water
- 1 bay leaf
- 4 cloves
- 2 cardamom pods
For the Biryani Base:
- 2 tbsp vegetable oil or ghee
- 1 onion thinly sliced
- 2 garlic cloves minced
- 1 tsp ginger grated
- 200 g chicken pieces or mixed vegetables
- 1/2 cup yogurt
- 1 tsp turmeric
- 1 tsp chili powder
- 1 tsp garam masala
- 1/2 cup chopped tomatoes
For Garnish:
- Caramelized onions
- Fresh cilantro
Instructions
- Cook the rice with water, bay leaf, cloves, and cardamom pods until 80% done. Drain and set aside.
- Heat oil or ghee in a large pan. Sauté sliced onions until golden brown. Remove half for garnish.
- Add garlic, ginger, chicken, or vegetables to the pan. Stir in yogurt, turmeric, chili powder, and garam masala. Cook for 10 minutes until the chicken or vegetables are tender.
- Layer the partially cooked rice over the chicken or vegetable mixture in the pan. Sprinkle caramelized onions and cilantro on top. Cover tightly and cook on low heat for 15 minutes.
- Serve hot with raita or plain yogurt on the side.
