
Soupe à l’Oignon (French Onion Soup)
A classic French soup made with caramelized onions and a rich broth, topped with a slice of toasted bread and melted cheese.
Ingredients
- 4 large onions thinly sliced
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 2 garlic cloves minced
- 1 tbsp all-purpose flour
- 1/2 cup dry white wine
- 6 cups beef or vegetable broth
- 1 tsp dried thyme
- 1 bay leaf
- Salt and black pepper to taste
- 4 slices of baguette toasted
- 1 cup grated Gruyère cheese
Instructions
- Heat butter and olive oil in a large pot over medium heat. Add sliced onions and cook, stirring frequently, for about 30-40 minutes until deeply caramelized.
- Add garlic and flour, stirring for 1 minute. Deglaze the pot with white wine, scraping up any browned bits.
- Pour in the broth and add thyme, bay leaf, salt, and pepper. Simmer for 20-30 minutes.
- Preheat your oven’s broiler. Ladle the soup into oven-safe bowls. Top each with a slice of toasted baguette and a generous layer of grated Gruyère cheese.
- Place the bowls under the broiler until the cheese is melted and bubbly. Serve hot.
