Kung Pao Chicken (Spicy Chicken with Peanuts)

Ingredients
  

  • 500 g chicken breast or thigh cubed
  • 1/2 cup peanuts
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 6-8 dried chili peppers
  • 2 garlic cloves minced
  • 1 tsp ginger grated
  • 2 tbsp vegetable oil

For the Sauce:

  • 3 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp cornstarch mixed with 2 tbsp water

Instructions
 

  • Mix soy sauce, hoisin sauce, rice vinegar, sugar, and cornstarch mixture in a bowl to prepare the sauce.
  • Heat vegetable oil in a large skillet or wok over medium heat. Add dried chili peppers and cook until aromatic.
  • Add chicken cubes to the pan and stir-fry until browned and fully cooked. Remove and set aside.
  • In the same pan, stir-fry garlic, ginger, and bell peppers for 2-3 minutes.
  • Return the chicken to the pan and add the peanuts. Pour the sauce over the mixture, stirring well to coat everything evenly.
  • Cook for 1-2 minutes until the sauce thickens. Serve hot over steamed rice or noodles.
