
Fried Rice (Vegetable or Chicken Fried Rice)
A versatile and flavorful dish, Fried Rice is made with stir-fried rice, vegetables, and optionally chicken, creating a hearty and satisfying meal.
Ingredients
- 3 cups cooked and cooled rice preferably day-old
- 200 g chicken breast or thigh diced, optional
- 1 cup mixed vegetables e.g., peas, carrots, corn
- 2 eggs beaten
- 3 tbsp soy sauce
- 1 tbsp oyster sauce optional
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- 2 green onions sliced
- Salt and black pepper to taste
Instructions
- Heat vegetable oil in a large skillet or wok over medium heat. If using chicken, stir-fry it until fully cooked and browned. Remove and set aside.
- Add beaten eggs to the skillet and scramble until just set. Push the eggs to one side of the skillet.
- Add mixed vegetables to the skillet and stir-fry for 2-3 minutes.
- Add the cooked rice to the skillet and mix everything together. Stir in soy sauce, oyster sauce (if using), and sesame oil, tossing to coat the rice evenly.
- Return the cooked chicken to the skillet, if using, and mix well. Stir in green onions and cook for 1-2 minutes. Adjust seasoning with salt and pepper.
- Serve hot as a main dish or side.
