
Pumpkin Waffle

Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup pumpkin puree
- 1.5 cups milk
- 2 large eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Honey maple syrup, or whipped cream for serving
Instructions
- In a bowl, mix the flour, sugar, baking powder, cinnamon, ginger, and salt.
- In a separate bowl, whisk the pumpkin puree, milk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until smooth.
- Preheat your waffle iron and lightly coat it with non-stick spray. Pour the batter onto the iron and cook until golden brown.
- Serve the warm waffles with honey, maple syrup, or whipped cream.
