Ingredients
- 1.5 cups oat flour
- 2 ripe bananas mashed
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1.25 cups almond milk or oat milk
- 1 tablespoon maple syrup optional
- 1 teaspoon vanilla extract
- Coconut oil for greasing the pan
- Fresh fruit and maple syrup for topping
Instructions
- In a bowl, mix the oat flour, baking powder, cinnamon, and salt.
- Add the mashed bananas, almond milk, maple syrup (if using), and vanilla extract, and mix until smooth.
- Heat a skillet over medium heat and grease it with coconut oil. Pour 1/4 cup of batter for each pancake and cook until bubbles form on the edges. Flip and cook until golden brown.
