Ingredients
  

  • 1.5 cups oat flour
  • 2 ripe bananas mashed
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1.25 cups almond milk or oat milk
  • 1 tablespoon maple syrup optional
  • 1 teaspoon vanilla extract
  • Coconut oil for greasing the pan
  • Fresh fruit and maple syrup for topping

Instructions
 

  • In a bowl, mix the oat flour, baking powder, cinnamon, and salt.
  • Add the mashed bananas, almond milk, maple syrup (if using), and vanilla extract, and mix until smooth.
  • Heat a skillet over medium heat and grease it with coconut oil. Pour 1/4 cup of batter for each pancake and cook until bubbles form on the edges. Flip and cook until golden brown.
  • Place the pancakes on a serving plate and top with fresh fruit and maple syrup.
