
Menemen with Sucuk (Turkish Scrambled Eggs with Sausage)
A delicious and hearty Turkish breakfast dish made with tomatoes, peppers, sucuk, and eggs.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion finely chopped
- 2 green peppers finely chopped
- 1 cup sucuk Turkish sausage, sliced or diced
- 4 ripe tomatoes chopped
- 4 large eggs
- Salt and pepper to taste
- Optional: fresh parsley or red pepper flakes for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add the onion and sauté until softened.
- Add the peppers and cook for a few more minutes.
- Add the sucuk slices and cook until they start to brown.
- Add the chopped tomatoes and cook until softened and the liquid reduces.
- Crack the eggs into the skillet and stir to combine or leave them whole. Season with salt and pepper.
- Garnish with fresh parsley or red pepper flakes and serve hot.
