Shakshuka

A classic Middle Eastern and North African breakfast dish made with tomato sauce, peppers, spices, and eggs.

Ingredients
  

  • 4 large eggs
  • 1 large onion chopped
  • 1 large red bell pepper chopped
  • 2 garlic cloves minced
  • 4 ripe tomatoes chopped, or 1 cup tomato purée
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley or cilantro for garnish

Instructions
 

  • Heat olive oil in a pan over medium heat. Add the chopped onion and red bell pepper, and sauté until softened, about 5 minutes.
  • Add the garlic and sauté for another minute.
  • Add tomatoes, tomato paste, paprika, cumin, salt, and pepper. Simmer for about 10 minutes until the sauce thickens.
  • Make small wells in the sauce with a spoon and crack an egg into each well. Cover the pan with a lid and cook until the eggs are set to your liking, about 5 minutes.
  • Garnish with fresh parsley or cilantro and serve hot.
