
Shakshuka
A classic Middle Eastern and North African breakfast dish made with tomato sauce, peppers, spices, and eggs.
Ingredients
- 4 large eggs
- 1 large onion chopped
- 1 large red bell pepper chopped
- 2 garlic cloves minced
- 4 ripe tomatoes chopped, or 1 cup tomato purée
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley or cilantro for garnish
Instructions
- Heat olive oil in a pan over medium heat. Add the chopped onion and red bell pepper, and sauté until softened, about 5 minutes.
- Add the garlic and sauté for another minute.
- Add tomatoes, tomato paste, paprika, cumin, salt, and pepper. Simmer for about 10 minutes until the sauce thickens.
- Make small wells in the sauce with a spoon and crack an egg into each well. Cover the pan with a lid and cook until the eggs are set to your liking, about 5 minutes.
- Garnish with fresh parsley or cilantro and serve hot.
