Ingredients
  

  • 6 large eggs
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 green chili, finely chopped
  • 1/4 cup fresh cilantro leaves, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (optional)
  • 1 teaspoon garam masala
  • 1 teaspoon cumin seeds
  • 2 tablespoons olive oil or ghee
  • Salt, to taste

Instructions
 

  • In a bowl, beat the eggs and set aside.
  • Heat a pan over medium heat, add the oil, and sauté the onions until golden.
  • Add the green chili and sauté for another minute, then add tomatoes and cook until softened.
  • Add turmeric, red chili powder, garam masala, and cumin, stirring the spices for a few seconds to release their aroma.
  • Pour in the beaten eggs, stirring continuously until the eggs are fully cooked.
  • Garnish with fresh cilantro leaves and serve hot.
