
Masala Egg Bhurji (Indian Spiced Scrambled Eggs)

Ingredients
- 6 large eggs
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 1 green chili, finely chopped
- 1/4 cup fresh cilantro leaves, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (optional)
- 1 teaspoon garam masala
- 1 teaspoon cumin seeds
- 2 tablespoons olive oil or ghee
- Salt, to taste
Instructions
- In a bowl, beat the eggs and set aside.
- Heat a pan over medium heat, add the oil, and sauté the onions until golden.
- Add the green chili and sauté for another minute, then add tomatoes and cook until softened.
- Add turmeric, red chili powder, garam masala, and cumin, stirring the spices for a few seconds to release their aroma.
- Pour in the beaten eggs, stirring continuously until the eggs are fully cooked.
- Garnish with fresh cilantro leaves and serve hot.
