Huevos Rancheros

A delicious Mexican breakfast dish featuring tortillas topped with eggs, black beans, tomato salsa, avocado, and cheese.

Ingredients
  

  • 4 corn or flour tortillas
  • 4 large eggs
  • 2 cups black beans (cooked or canned, rinsed)
  • 2 cups tomato salsa or sauce
  • 1/2 cup shredded white cheese or cheddar
  • 1 avocado, sliced
  • Fresh cilantro leaves, for garnish
  • Salt and pepper, to taste
  • A small amount of olive oil for cooking

Instructions
 

  • Heat a skillet over medium heat, lightly grease, and warm the tortillas for 1-2 minutes on each side. Set them aside.
  • In the same skillet, add a little oil, crack the eggs, and cook to desired doneness (sunny-side up or fully cooked).
  • Place the warmed tortillas on plates, then add black beans and warm salsa or tomato sauce on top.
  • Place one egg on each tortilla and sprinkle with shredded cheese.
  • Garnish with avocado slices and fresh cilantro leaves. Add salt and pepper to taste, and serve immediately.
