
Huevos Rancheros
A delicious Mexican breakfast dish featuring tortillas topped with eggs, black beans, tomato salsa, avocado, and cheese.
Ingredients
- 4 corn or flour tortillas
- 4 large eggs
- 2 cups black beans (cooked or canned, rinsed)
- 2 cups tomato salsa or sauce
- 1/2 cup shredded white cheese or cheddar
- 1 avocado, sliced
- Fresh cilantro leaves, for garnish
- Salt and pepper, to taste
- A small amount of olive oil for cooking
Instructions
- Heat a skillet over medium heat, lightly grease, and warm the tortillas for 1-2 minutes on each side. Set them aside.
- In the same skillet, add a little oil, crack the eggs, and cook to desired doneness (sunny-side up or fully cooked).
- Place the warmed tortillas on plates, then add black beans and warm salsa or tomato sauce on top.
- Place one egg on each tortilla and sprinkle with shredded cheese.
- Garnish with avocado slices and fresh cilantro leaves. Add salt and pepper to taste, and serve immediately.
